Quality vs. Quantity

We are often asked if we produce a 'larger' or 'Superior' kit. In order to properly respond, we have to look at what exactly goes into the makeup of a winemaking kit. To produce a standard 23 liters of wine at acceptable alcohol levels, we require a certain amount of fermentable solids in the form of grape concentrate, grape juice or other fermentables such as table sugar or liquid invert.

We know that 6.3 liters of concentrate will give us a starting gravity of 1.094 when diluted to 23 liters.

Some manufacturers use a combination of grape juice concentrate and grape juice and/or water and/or liquid invert sugar in both their smaller sized kits and their larger, 'premium' offerings.

The question then arises.. "How do you define 'grape juice?" One source of grape juice is from a combination of water and grape juice concentrate. Thus, the customer may be paying higher shipping charges for shipping water. Regardless of the size of the kit, in order to make 23 liters of wine at a given percentage alcohol, you only require a certain amount of fermentable solids. If the kit is larger, the concentration of sugars is less.

The real question should be "What is the quality?" Most of the kit manufacturers have done a great job at marketing to their customers, who are almost all home winemakers. Using a combination of the above ingredients, they have met their customer expectations. Many will use blends of varietals from different countries as part of their concentrate makeup and will use generic red or white concentrates to make up the difference. About 92% of the grape concentrate produced worldwide is made for the 'sweetening' market and competes with other sugar sweeteners. That leaves 8% which is concentrated from known varietals and is marketed to the winemaking industry.

USElite uses only 100% varietal grape juice concentrate. We certify the appellation of each varietal and provide documentation that meet all Federal regulations. We do not blend varietals from different countries. We do not add generic grape nor do we add water or sugar in any form. Our concentrates are the same as used by many commercial wineries in the United States.

These processors, while producing massive amounts of generic grape concentrates for the food industry also produce a small amount of specially handled, 100% varietal grape juice concentrates for use in wineries. These concentrates are not repasteurized and thus retain a much higher percentage of their vinuous components. There is no sugar or water added. They are balanced for perfect winemaking results and are available in both 'kit' format and also in bladders only. All are shipped in plain brown cartons from our plant in the United States for quick delivery.
